Ingredients

  • 1.5 lb (680 g) chicken thighs, boneless and skinless, cut into chunks
  • 2 tbsp butter or oil
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cup chicken broth
  • 1 cup water
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt (for dumplings)
  • 0.75 cup milk

Steps

  1. Heat butter or oil in a large pot over medium heat. Add chicken and brown lightly, about 5 minutes.
  2. Add onion, carrots, and celery; cook 4–5 minutes until softened.
  3. Pour in chicken broth and water. Stir in thyme, salt, and pepper. Bring to a simmer.
  4. In a bowl, mix flour, baking powder, and dumpling salt. Stir in milk until just combined.
  5. Drop spoonfuls of dumpling batter over simmering broth — do not stir once they go in.
  6. Cover the pot and simmer 12–15 minutes until dumplings are puffed and cooked through.
  7. Serve hot with chicken and vegetables in each bowl.
