
Basic Fried Rice (チャーハン)
Ingredients
- 3 cup cooked and chilled rice (preferably day-old)
- 2 tbsp vegetable oil
- 2 large eggs, beaten
- 1 small onion, diced
- 0.5 cup frozen peas and carrots
- 2-3 tbsp soy sauce
- Salt and black pepper to taste
- 1-2 green onions, sliced (optional)
- 1 tsp sesame oil for finishing
Steps
- Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
- Add beaten eggs and scramble quickly until just set. Remove eggs and set aside.
- Add remaining oil to the pan and sauté diced onion until soft, about 2–3 minutes.
- Add peas and carrots and cook another 2 minutes.
- Add chilled rice, breaking up any clumps, and stir-fry 3–4 minutes until heated through.
- Drizzle soy sauce over the rice and mix thoroughly.
- Return scrambled eggs to the pan and stir to combine.
- Season with salt and pepper, drizzle sesame oil if using, and stir in green onions.
- Serve hot.
