Basic Fried Rice (チャーハン)

Simple fried rice you can make in one pan — rice, eggs, and basics fried up fast with minimal effort.

Ingredients

  • 3 cup cooked and chilled rice (preferably day-old)
  • 2 tbsp vegetable oil
  • 2 large eggs, beaten
  • 1 small onion, diced
  • 0.5 cup frozen peas and carrots
  • 2-3 tbsp soy sauce
  • Salt and black pepper to taste
  • 1-2 green onions, sliced (optional)
  • 1 tsp sesame oil for finishing

Steps

  1. Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
  2. Add beaten eggs and scramble quickly until just set. Remove eggs and set aside.
  3. Add remaining oil to the pan and sauté diced onion until soft, about 2–3 minutes.
  4. Add peas and carrots and cook another 2 minutes.
  5. Add chilled rice, breaking up any clumps, and stir-fry 3–4 minutes until heated through.
  6. Drizzle soy sauce over the rice and mix thoroughly.
  7. Return scrambled eggs to the pan and stir to combine.
  8. Season with salt and pepper, drizzle sesame oil if using, and stir in green onions.
  9. Serve hot.
