Ingredients

  • 2 cup frozen shoestring (matchstick) potatoes
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 cup cooked ham, diced
  • 4 large eggs
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • Chopped parsley for garnish (optional)

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add frozen potatoes and cook 5–7 minutes until crispy and golden.
  3. Stir in onion and ham; cook 2–3 minutes until heated through.
  4. In a bowl, whisk eggs with salt and pepper.
  5. Pour eggs over the potato and ham mixture and stir gently until eggs are just set.
  6. Remove from heat, garnish with parsley if desired, and serve immediately.
