Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 0.25 cup sugar (optional for slight sweetness)
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 cup buttermilk (or milk with 1 tbsp lemon juice)
  • 2 large eggs
  • 0.25 cup bacon grease, melted butter or oil

Steps

  1. Preheat oven to 425°F (220°C).
  2. Grease a 9-inch cast iron skillet or baking pan.
  3. In a bowl, whisk together cornmeal, flour, sugar (if using), baking powder, and salt.
  4. In another bowl, whisk buttermilk, eggs, and melted butter.
  5. Pour wet ingredients into dry and stir until just combined — don't overmix.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake 20–25 minutes until golden and a toothpick inserted in the center comes out clean.
  8. Let cool slightly, then slice and serve.
