
Crispy Hushpuppies
Ingredients
- 1 cup yellow cornmeal
- 0.5 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.25 cup finely chopped onion
- 1 egg, beaten
- 0.75 cup milk
- Oil for frying (vegetable or canola)
Steps
- Heat oil in a deep skillet or pot to 350°F (175°C).
- In a bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and pepper.
- Stir in chopped onion.
- Mix in egg and milk until just combined (batter will be thick).
- Drop spoonfuls of batter into the hot oil, being careful not to overcrowd.
- Fry 2–3 minutes, turning occasionally, until golden and cooked through.
- Remove hushpuppies with a slotted spoon and drain on paper towels.
- Serve warm with your favorite dipping sauce.
