
Grilled Fish Loco Moco Over Rice
Ingredients
- 2 cup cooked white or jasmine rice
- 4 fish fillets (tilapia, cod, or mahi-mahi)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 0.5 tsp paprika
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tbsp lemon juice
- 4 large eggs
- 2 cup brown gravy (store-bought or homemade)
- Optional: sliced green onions
Steps
- Preheat grill or grill pan to medium-high heat.
- Brush fish with olive oil and season with garlic powder, paprika, salt, and pepper.
- Grill fish 3–4 minutes per side until cooked through and lightly charred. Drizzle with lemon juice.
- Warm the gravy in a saucepan or microwave.
- In a skillet, fry eggs to your preferred doneness.
- Divide cooked rice into bowls or plates.
- Place a grilled fish fillet over each portion of rice.
- Top each with a fried egg.
- Pour warm gravy over the stack.
- Garnish with green onions if using and serve immediately.
