
Chicken Pizzaiola
Ingredients
- 1.5 lb (680 g) chicken breasts or thighs, cut into pieces
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 0.5 tsp red pepper flakes (optional)
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.5 cup chicken broth
- 2 tbsp capers (optional)
- 2 tbsp chopped fresh parsley
Steps
- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and brown on all sides, about 4–5 minutes.
- Stir in garlic and cook 30 seconds until fragrant.
- Add crushed tomatoes, oregano, basil, red pepper flakes (if using), salt, pepper, and chicken broth.
- Bring to a simmer, then reduce heat and cook 12–15 minutes until the chicken is cooked through and the sauce has slightly thickened.
- Stir in capers and parsley just before serving.
- Serve hot over pasta, rice, or with crusty bread to soak up the sauce.
