Ingredients

  • 1.5 lb (680 g) chicken breasts or thighs, cut into pieces
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp red pepper flakes (optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup chicken broth
  • 2 tbsp capers (optional)
  • 2 tbsp chopped fresh parsley

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and brown on all sides, about 4–5 minutes.
  3. Stir in garlic and cook 30 seconds until fragrant.
  4. Add crushed tomatoes, oregano, basil, red pepper flakes (if using), salt, pepper, and chicken broth.
  5. Bring to a simmer, then reduce heat and cook 12–15 minutes until the chicken is cooked through and the sauce has slightly thickened.
  6. Stir in capers and parsley just before serving.
  7. Serve hot over pasta, rice, or with crusty bread to soak up the sauce.
