Lebanese Meat Pie (Sfeehas)

Ingredients

  • For the dough:
  • 3 cup all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 2.25 tsp active dry yeast (1 packet)
  • 1 cup warm water
  • 3 tbsp olive oil
  • For the filling:
  • 1 lb (450 g) ground beef or lamb
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 2 tbsp pine nuts (optional)
  • 1 tsp ground allspice
  • 0.5 tsp ground cinnamon
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp chopped parsley (optional)

Steps

  1. In a bowl, mix warm water, sugar, and yeast. Let stand 5–10 minutes until foamy.
  2. Combine flour and salt in a large bowl. Add yeast mixture and olive oil; knead 8–10 minutes until smooth.
  3. Cover dough and let rise 1 hour until doubled in size.
  4. Meanwhile, heat olive oil in a skillet over medium heat. Add onion and cook 3–4 minutes until soft.
  5. Add garlic and ground meat; cook until browned and fully cooked. Drain excess fat if needed.
  6. Stir in pine nuts, allspice, cinnamon, salt, pepper, and parsley. Let filling cool.
  7. Preheat oven to 375°F (190°C).
  8. Divide dough into small balls and roll each into a 4–5 inch circle.
  9. Place a spoonful of meat filling in the center of each circle.
  10. Fold edges up and pinch three sides together to form a triangle.
  11. Arrange on a baking sheet and bake 15–18 minutes until lightly golden.
  12. Serve warm.
