Ingredients

  • 1 lb (450 g) chicken breast, sliced thin
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 8 small flour or corn tortillas
  • Optional toppings: lime wedges, sour cream, salsa, shredded cheese, cilantro

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken strips and cook 4–5 minutes until browned and nearly cooked through.
  3. Sprinkle chili powder, cumin, paprika, garlic powder, salt, and pepper over the chicken; stir to coat.
  4. Add sliced peppers and onion; cook 5–6 minutes until vegetables are tender-crisp and chicken is fully cooked.
  5. Warm the tortillas in a dry skillet or microwave for 15–20 seconds.
  6. Divide the chicken and veggie mixture among the tortillas.
  7. Add optional toppings if desired and serve immediately.
