Ingredients

  • 1.5 lb (680 g) boneless skinless chicken thighs or breasts, cubed
  • 2 tbsp oil
  • 0.25 cup soy sauce
  • 0.25 cup brown sugar
  • 2 tbsp ketchup
  • 1-2 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 0.5 tsp ground ginger (optional)
  • 0.25 tsp black pepper
  • 0.5 cup water
  • 2 tsp cornstarch (optional, for thicker glaze)
  • Optional: sesame seeds and sliced green onions for garnish

Steps

  1. Heat oil in a large skillet over medium-high heat.
  2. Add chicken and cook 5–7 minutes until browned all over.
  3. In a bowl, whisk together soy sauce, brown sugar, ketchup, vinegar, garlic powder, ginger (if using), pepper, and water.
  4. Pour sauce mixture over the chicken and bring to a simmer.
  5. Reduce heat and cook 6–8 minutes until sauce thickens and chicken is cooked through.
  6. If you want a stickier glaze, stir cornstarch into 1 tbsp cold water and add to the skillet. Cook 1–2 more minutes until glossy.
  7. Serve hot over rice and sprinkle with sesame seeds and green onions if desired.
