Southern-Style Mashed Potatoes

Ingredients

  • 2 lb russet or Yukon Gold potatoes, peeled and cut into chunks
  • 4 tbsp unsalted butter
  • 0.5 cup whole milk or cream
  • 0.25 cup sour cream (optional but worth it)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh chives, chopped

Steps

  1. Place potato chunks in a large pot and cover with cold water. Add a pinch of salt.
  2. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 15–20 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Heat milk (and sour cream if using) with 2 tbsp butter until warm.
  5. Mash the potatoes while slowly adding the milk-butter mixture until smooth and creamy.
  6. Stir in the remaining butter, salt, and pepper.
  7. Fold in chopped chives.
  8. Serve warm with extra butter on top if you're feeling generous.
