
Succotash
Ingredients
- 2 cup fresh or frozen corn kernels
- 1.5 cup lima beans (fresh or frozen)
- 2 celery stalks, sliced
- 1 small onion, diced
- 2 tbsp butter or olive oil
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
Steps
- Heat butter or olive oil in a large skillet over medium heat.
- Add onion and celery; cook 3–4 minutes until softened.
- Stir in corn and lima beans; cook 5–7 minutes until veggies are tender and heated through.
- Season with salt and pepper.
- Remove from heat and sprinkle with parsley if using.
- Serve warm as a side dish.
